Keto Cauliflower Mash

Simple to make and low in carbs, it's a popular side dish amongst the Keto community! 

Ingredients for 4 servings

Unsalted Butter1-½ tablespoon

Cauliflower 1 medium – head 558g

Garlic 1 clove

Fresh Thyme 1 tablespoon

Parmesan Cheese 1 tablespoon, grated

Sour Cream 58g

Salt, Sea Salt ¼ teaspoon

Black Pepper ⅛ Teaspoon

  1. Dice the cauliflower into florets. Add the florets to a pan of boiling water and simmer until tender. About 5 minutes. Drain the cauliflower and pat dry.

  2. Add the cauliflower to a food processor along with the garlic, parmesan and butter. Season to taste and blend to a mash.

  3. Add the sour cream and blend again dressing with either fresh chives or Thyme
