Keto Olive Tapenade
Olives are an excellent source of healthy fats and are packed with nutrients. Tapenade is perfect with salads, cheese plates and as a savoury breakfast.
For this simple recipe, you will need a small food processor. You can omit the anchovies to make this dish vegan.

Ingredients (4 servings)
• Olives pitted (fresh or bottled) 200g
• Garlic 1 clove
• Capers 1tbsp
• Olive Oil 4tbsp
• Salt pinch ¼ tsp
• Pepper pinch ¼ tsp
• Anchovies (omit if you wish)1 tbsp
• Lemon juice 1tbsp
• Parsley 20g to dress

Preparation
- Add the olives, garlic, capers,salt, pepper, anchovies, and lemon to the food processor
- Pour the olive oil and lemon juice and blitz for around 1 minute
- Dress with parsley and add more salt if you desire
- Refrigerate for up to 1 week in sealed container
